
Thai Shrimp Cakes

Ingredients:
- 1 pound Shrimp
- 2 cloves Garlic
- 1 Red chilli
- 1 bunch Cilantro
- 1 Egg
- 2 tablespoons Fish sauce
- 1 teaspoon Salt
- 0.5 teaspoon Pepper
- 1 cup Panko bread crumbs
- sufficient for frying Vegetable oil
Instructions:
- Peel and devein the shrimp. Rinse under cold water. Dry with kitchen paper and finely chop.
- Peel and finely chop the garlic. Cut the chilli into thin slices (if you prefer less spicy, you can remove the seeds). Chop the cilantro roughly.
- In a large bowl, beat the egg and mix in the fish sauce, salt and pepper. Add shrimp, garlic, chili, cilantro and bread crumbs. Mix well until you have a sticky mixture.
- Form the mixture into small patties. If the mixture is too wet, add more bread crumbs.
- Heat the oil in a large frying pan and fry the patties for 2-3 minutes on each side until golden brown and crispy.
- For best taste, serve hot with Thai sweet chili sauce.
