Thai Shrimp Cakes

Ingredients:

  • 1 pound Shrimp
  • 2 cloves Garlic
  • 1 Red chilli
  • 1 bunch Cilantro
  • 1 Egg
  • 2 tablespoons Fish sauce
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 1 cup Panko bread crumbs
  • sufficient for frying Vegetable oil

Instructions:

  1. Peel and devein the shrimp. Rinse under cold water. Dry with kitchen paper and finely chop.
  2. Peel and finely chop the garlic. Cut the chilli into thin slices (if you prefer less spicy, you can remove the seeds). Chop the cilantro roughly.
  3. In a large bowl, beat the egg and mix in the fish sauce, salt and pepper. Add shrimp, garlic, chili, cilantro and bread crumbs. Mix well until you have a sticky mixture.
  4. Form the mixture into small patties. If the mixture is too wet, add more bread crumbs.
  5. Heat the oil in a large frying pan and fry the patties for 2-3 minutes on each side until golden brown and crispy.
  6. For best taste, serve hot with Thai sweet chili sauce.
