Thai Seafood Stir-Fry

Ingredients:

  • 500 grams seafood mix
  • 3 pieces garlic cloves
  • 1 piece red bell pepper
  • 200 grams snow peas
  • 150 grams shiitake mushrooms
  • 2 tablespoons light soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 2 tablespoons lime juice
  • a handful basil leaves
  • 2 tablespoons canola oil

Instructions:

  1. Clean the seafood mix and set aside.
  2. Mince the garlic cloves. Slice the red bell pepper and shiitake mushrooms. Wash the snow peas and remove the strings if necessary.
  3. In a bowl, combine the light soy sauce, fish sauce, brown sugar, and lime juice. Stir until the sugar is fully dissolved.
  4. Heat the canola oil in a wok over medium high heat. Add the minced garlic and stir-fry for about 1 minute or until fragrant.
  5. Add the seafood mix to the wok and stir-fry until it starts to turn opaque. Remove the seafood from the wok and set aside.
  6. In the same wok, add the red bell pepper, snow peas, and shiitake mushrooms. Stir-fry for about 2 minutes then add the sauce. Cook for another 2 minutes or until the vegetables are tender.
  7. Return the seafood to the wok and add the basil leaves. Stir-fry for another 2 minutes or until the seafood is fully cooked and the sauces are well blended.
  8. Serve the Thai Seafood Stir-Fry hot with steamed jasmine rice.
