
Thai Seafood Stir-Fry

Ingredients:
- 500 grams seafood mix
- 3 pieces garlic cloves
- 1 piece red bell pepper
- 200 grams snow peas
- 150 grams shiitake mushrooms
- 2 tablespoons light soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 2 tablespoons lime juice
- a handful basil leaves
- 2 tablespoons canola oil
Instructions:
- Clean the seafood mix and set aside.
- Mince the garlic cloves. Slice the red bell pepper and shiitake mushrooms. Wash the snow peas and remove the strings if necessary.
- In a bowl, combine the light soy sauce, fish sauce, brown sugar, and lime juice. Stir until the sugar is fully dissolved.
- Heat the canola oil in a wok over medium high heat. Add the minced garlic and stir-fry for about 1 minute or until fragrant.
- Add the seafood mix to the wok and stir-fry until it starts to turn opaque. Remove the seafood from the wok and set aside.
- In the same wok, add the red bell pepper, snow peas, and shiitake mushrooms. Stir-fry for about 2 minutes then add the sauce. Cook for another 2 minutes or until the vegetables are tender.
- Return the seafood to the wok and add the basil leaves. Stir-fry for another 2 minutes or until the seafood is fully cooked and the sauces are well blended.
- Serve the Thai Seafood Stir-Fry hot with steamed jasmine rice.
