
Thai Seafood Curry

Ingredients:
- 2 cups Coconut milk
- 500 grams Mixed seafood
- 3 tablespoons Thai green curry paste
- 2 tablespoons Fish sauce
- 1 tablespoon Brown sugar
- A handful Thai basil leaves
- 1 Red bell pepper
- 1 White onion
- 3 Garlic cloves
Instructions:
- In a large pot, sauté the red bell pepper, white onion, and garlic until tender.
- Stir in the green curry paste and continue to cook on medium heat for 1-2 minutes.
- Add the coconut milk and bring to a simmer.
- Stir in the fish sauce and brown sugar and bring mixture to a simmer.
- Add the mixed seafood to the pot and allow it to cook thoroughly. This will take approximately 10-15 minutes, or until the shrimp are pink and the fish pieces are opaque.
- Adding Thai basil leaves and stir until wilted.
- Serve the curry hot over rice and garnish with additional Thai basil leaves.
