Thai Seafood Curry

Ingredients:

  • 2 cups Coconut milk
  • 500 grams Mixed seafood
  • 3 tablespoons Thai green curry paste
  • 2 tablespoons Fish sauce
  • 1 tablespoon Brown sugar
  • A handful Thai basil leaves
  • 1 Red bell pepper
  • 1 White onion
  • 3 Garlic cloves

Instructions:

  1. In a large pot, sauté the red bell pepper, white onion, and garlic until tender.
  2. Stir in the green curry paste and continue to cook on medium heat for 1-2 minutes.
  3. Add the coconut milk and bring to a simmer.
  4. Stir in the fish sauce and brown sugar and bring mixture to a simmer.
  5. Add the mixed seafood to the pot and allow it to cook thoroughly. This will take approximately 10-15 minutes, or until the shrimp are pink and the fish pieces are opaque.
  6. Adding Thai basil leaves and stir until wilted.
  7. Serve the curry hot over rice and garnish with additional Thai basil leaves.
