Thai Seafood Breakfast Stir-Fry

Ingredients:

  • 200 grams Shrimp
  • 200 grams Mussels
  • 1 cup Fresh Thai Basil Leaves
  • 2 cloves Garlic
  • 2 pieces Red Chilies
  • 1 tablespoon Olive Oil
  • 2 tablespoons Low-Sodium Soy Sauce
  • 1 piece Zucchini
  • 1 piece Bell Pepper
  • 2 pieces Eggs

Instructions:

  1. 1. Start by cleaning the shrimp and mussels, and chopping the vegetables.
  2. 2. Heat the olive oil in a large non-stick skillet over medium heat.
  3. 3. Add in the garlic and red chilies, stirring until the garlic begins to brown.
  4. 4. Add in the shrimp and mussels, cooking until the shrimp turns pink and the mussels have opened.
  5. 5. Remove the seafood from the pan and set it aside.
  6. 6. In the same pan, add in the zucchini and bell pepper, cooking until they begin to soften.
  7. 7. Push the vegetables over to one side of the pan, and crack the eggs into the other. Scramble the eggs, then mix everything together.
  8. 8. Add the shrimp and mussels back into the pan, along with the Thai basil leaves and soy sauce. Stir everything together until it's well combined.
  9. 9. Serve the stir-fry hot, sprinkled with additional fresh Thai basil leaves if desired.
