
Thai Seafood Breakfast Stir-Fry

Ingredients:
- 200 grams Shrimp
- 200 grams Mussels
- 1 cup Fresh Thai Basil Leaves
- 2 cloves Garlic
- 2 pieces Red Chilies
- 1 tablespoon Olive Oil
- 2 tablespoons Low-Sodium Soy Sauce
- 1 piece Zucchini
- 1 piece Bell Pepper
- 2 pieces Eggs
Instructions:
- 1. Start by cleaning the shrimp and mussels, and chopping the vegetables.
- 2. Heat the olive oil in a large non-stick skillet over medium heat.
- 3. Add in the garlic and red chilies, stirring until the garlic begins to brown.
- 4. Add in the shrimp and mussels, cooking until the shrimp turns pink and the mussels have opened.
- 5. Remove the seafood from the pan and set it aside.
- 6. In the same pan, add in the zucchini and bell pepper, cooking until they begin to soften.
- 7. Push the vegetables over to one side of the pan, and crack the eggs into the other. Scramble the eggs, then mix everything together.
- 8. Add the shrimp and mussels back into the pan, along with the Thai basil leaves and soy sauce. Stir everything together until it's well combined.
- 9. Serve the stir-fry hot, sprinkled with additional fresh Thai basil leaves if desired.
