Thai Red Curry Pork

Ingredients:

  • 1 pound Pork tenderloin
  • 2 tablespoons Thai red curry paste
  • 14 ounces Coconut milk
  • 1 tablespoon Soy sauce
  • 1 tablespoon Brown sugar
  • 1 cup Fresh basil leaves
  • 2 tablespoons Cooking oil
  • 1 whole Fresh lime
  • to taste Salt and pepper
  • 2 cups Steamed Jasmine rice

Instructions:

  1. Cut the pork tenderloin into thin slices.
  2. Heat oil in a large skillet over medium heat.
  3. Add the curry paste and cook until fragrant.
  4. Add the sliced pork and cook until browned and cooked through.
  5. Add the coconut milk, soy sauce, and brown sugar. Stir until well combined.
  6. Bring the mixture to a simmer and allow it to cook for 5-10 minutes until slightly reduced.
  7. Taste and adjust for seasoning with salt and pepper.
  8. Just before serving, stir in the fresh basil leaves and squeeze of lime juice.
  9. Serve the curry over steamed Jasmine rice.
