
Thai Red Curry Pork

Ingredients:
- 1 pound Pork tenderloin
- 2 tablespoons Thai red curry paste
- 14 ounces Coconut milk
- 1 tablespoon Soy sauce
- 1 tablespoon Brown sugar
- 1 cup Fresh basil leaves
- 2 tablespoons Cooking oil
- 1 whole Fresh lime
- to taste Salt and pepper
- 2 cups Steamed Jasmine rice
Instructions:
- Cut the pork tenderloin into thin slices.
- Heat oil in a large skillet over medium heat.
- Add the curry paste and cook until fragrant.
- Add the sliced pork and cook until browned and cooked through.
- Add the coconut milk, soy sauce, and brown sugar. Stir until well combined.
- Bring the mixture to a simmer and allow it to cook for 5-10 minutes until slightly reduced.
- Taste and adjust for seasoning with salt and pepper.
- Just before serving, stir in the fresh basil leaves and squeeze of lime juice.
- Serve the curry over steamed Jasmine rice.
