Thai Red Curry Fish

Ingredients:

  • 4 pieces White Fish fillets
  • 2 tablespoons Thai red curry paste
  • 2 cups Coconut milk
  • 1 tablespoon Fish sauce
  • 1 tablespoon Brown sugar
  • 1 tablespoon Lime juice
  • 1/2 cup Fresh basil leaves
  • 1 piece Fresh red chili, sliced
  • 2 cups Cooked jasmine rice

Instructions:

  1. Heat the curry paste in a large pan over medium heat for about a minute until it becomes fragrant.
  2. Stir in the coconut milk, fish sauce, sugar, and lime juice until well combined.
  3. Add the fish fillets to the pan, cover and simmer for about 15-20 minutes until the fish is cooked through.
  4. Stir in half of the basil leaves and red chili, and let it simmer for another minute.
  5. Serve the curry over cooked jasmine rice, garnished with the remaining basil and chili.
