
Thai Red Curry Fish

Ingredients:
- 4 pieces White Fish fillets
- 2 tablespoons Thai red curry paste
- 2 cups Coconut milk
- 1 tablespoon Fish sauce
- 1 tablespoon Brown sugar
- 1 tablespoon Lime juice
- 1/2 cup Fresh basil leaves
- 1 piece Fresh red chili, sliced
- 2 cups Cooked jasmine rice
Instructions:
- Heat the curry paste in a large pan over medium heat for about a minute until it becomes fragrant.
- Stir in the coconut milk, fish sauce, sugar, and lime juice until well combined.
- Add the fish fillets to the pan, cover and simmer for about 15-20 minutes until the fish is cooked through.
- Stir in half of the basil leaves and red chili, and let it simmer for another minute.
- Serve the curry over cooked jasmine rice, garnished with the remaining basil and chili.
