Thai Rainbow Vegetable Spring Rolls

Ingredients:

  • 8 units Rice paper wraps
  • 1 unit Red bell pepper
  • 2 units Carrots
  • 1 unit Mango
  • 0.5 unit Purple cabbage
  • 0.5 cup Fresh mint leaves
  • 0.5 cup Fresh cilantro
  • 0.5 cup Peanuts
  • to taste Sweet chili sauce

Instructions:

  1. Wash and finely chop the bell pepper, carrots, mango, and purple cabbage.
  2. Fill a large dish with warm water.
  3. Dip one rice paper wrap at a time into the warm water for about 10-15 seconds. Just until they become soft. Do not let them sit for too long or they will become too soft and will tear.
  4. Fill the wraps with a small handful of each vegetable, a few pieces of mango, and a sprinkle of mint leaves, cilantro, and peanuts.
  5. Fold the wrap tightly, as you would a burrito, tucking in all of the ingredients with the first roll then folding in the sides and rolling until closed.
  6. Repeat with all of the rice paper wraps and ingredients.
  7. Serve fresh with sweet chili sauce for dipping.
