
Thai Pineapple Fried Rice

Ingredients:
- 2 cups Long Grain Rice
- 2 Chicken Breasts
- 1 cup Pineapple Chunks
- 1 Red Bell Pepper
- 2 medium size Carrots
- 2 Garlic cloves
- 1 Onion
- 3 tablespoons Soy Sauce
- 1 teaspoon Curry Powder
- 1 cup Raw Shrimp
- 1/2 cup Cashews
- 2 stalks Green Onions
- 2 tablespoons Oil
Instructions:
- Cook the rice according to package instructions and set aside.
- Heat 1 tablespoon of oil in a large pan.
- Add chicken and shrimp to the pan, cook until they are cooked through. Remove them from the pan and set aside.
- In the same pan, add the remaining 1 tablespoon of oil. Add onions, garlic, bell peppers, and carrots. Cook until vegetables are tender.
- Add the rice, pineapple chunks, soy sauce, and curry powder into the pan. Stir well and cook for about 3 minutes.
- Add the cooked chicken, shrimp, and cashews to the pan and stir well.
