Thai Pineapple Fried Rice

Ingredients:

  • 2 cups Long Grain Rice
  • 2 Chicken Breasts
  • 1 cup Pineapple Chunks
  • 1 Red Bell Pepper
  • 2 medium size Carrots
  • 2 Garlic cloves
  • 1 Onion
  • 3 tablespoons Soy Sauce
  • 1 teaspoon Curry Powder
  • 1 cup Raw Shrimp
  • 1/2 cup Cashews
  • 2 stalks Green Onions
  • 2 tablespoons Oil

Instructions:

  1. Cook the rice according to package instructions and set aside.
  2. Heat 1 tablespoon of oil in a large pan.
  3. Add chicken and shrimp to the pan, cook until they are cooked through. Remove them from the pan and set aside.
  4. In the same pan, add the remaining 1 tablespoon of oil. Add onions, garlic, bell peppers, and carrots. Cook until vegetables are tender.
  5. Add the rice, pineapple chunks, soy sauce, and curry powder into the pan. Stir well and cook for about 3 minutes.
  6. Add the cooked chicken, shrimp, and cashews to the pan and stir well.
  7. Garnish with green onions before serving. Enjoy your Thai Pineapple Fried Rice as a comfort snack!
