
Thai Pasta Salad with Peanut Sauce

Ingredients:
- 8 ounce Whole wheat spaghetti
- 1 cup Red Bell Pepper
- 1 cup Yellow Bell Pepper
- 1 cup Carrot
- 1 cup Edamame
- 3 piece Green Onion
- 0.5 cup Cilantro
- 0.5 cup Peanut Butter
- 3 tablespoon Soy Sauce
- 3 tablespoon Lime Juice
- 2 tablespoon Honey or Agave
- 1 tablespoon Ginger
- 0.5 teaspoon Red Pepper Flakes
Instructions:
- Cook whole wheat spaghetti in boiling water according to the package instructions. Drain and rinse under cold water.
- In a large bowl, combine red bell pepper, yellow bell pepper, carrot, edamame, green onion, and cilantro.
- To make the peanut sauce, add peanut butter, soy sauce, lime juice, honey or agave, ginger, and red pepper flakes to a blender or food processor. Blend until smooth.
- Add the cooked pasta to the large bowl of vegetables. Pour the peanut sauce over the top and toss to combine.
- Serve immediately, or cover and refrigerate until ready to serve.
