Thai Pasta Salad with Peanut Sauce

Ingredients:

  • 8 ounce Whole wheat spaghetti
  • 1 cup Red Bell Pepper
  • 1 cup Yellow Bell Pepper
  • 1 cup Carrot
  • 1 cup Edamame
  • 3 piece Green Onion
  • 0.5 cup Cilantro
  • 0.5 cup Peanut Butter
  • 3 tablespoon Soy Sauce
  • 3 tablespoon Lime Juice
  • 2 tablespoon Honey or Agave
  • 1 tablespoon Ginger
  • 0.5 teaspoon Red Pepper Flakes

Instructions:

  1. Cook whole wheat spaghetti in boiling water according to the package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine red bell pepper, yellow bell pepper, carrot, edamame, green onion, and cilantro.
  3. To make the peanut sauce, add peanut butter, soy sauce, lime juice, honey or agave, ginger, and red pepper flakes to a blender or food processor. Blend until smooth.
  4. Add the cooked pasta to the large bowl of vegetables. Pour the peanut sauce over the top and toss to combine.
  5. Serve immediately, or cover and refrigerate until ready to serve.
