Thai Mixed Vegetable Curry

Ingredients:

  • 2 tbsp Vegetable oil
  • 2 tbsp Thai red curry paste
  • 1 can Coconut milk
  • 4 cups Vegetables (bell pepper, zucchini, carrot, baby corn, green beans)
  • 2 leaves Kaffir lime leaves
  • Handful Thai basil leaves
  • 1 tbsp Fish sauce/soy sauce
  • 1 tbsp Brown sugar
  • To serve Steam rice

Instructions:

  1. Heat the oil in a large pan over medium heat.
  2. Add the curry paste and stir until it starts to sizzle.
  3. Pour in the coconut milk and bring to a simmer.
  4. Add the vegetables, kaffir lime leaves, fish sauce (or soy sauce for a vegan option), and brown sugar. Stir well to coat in the curry sauce.
  5. Simmer for about 15-20 minutes, or until the vegetables are tender.
  6. Remove from heat and stir in the fresh Thai basil leaves.
  7. Serve hot with steamed rice.
