
Thai Mixed Vegetable Curry

Ingredients:
- 2 tbsp Vegetable oil
- 2 tbsp Thai red curry paste
- 1 can Coconut milk
- 4 cups Vegetables (bell pepper, zucchini, carrot, baby corn, green beans)
- 2 leaves Kaffir lime leaves
- Handful Thai basil leaves
- 1 tbsp Fish sauce/soy sauce
- 1 tbsp Brown sugar
- To serve Steam rice
Instructions:
- Heat the oil in a large pan over medium heat.
- Add the curry paste and stir until it starts to sizzle.
- Pour in the coconut milk and bring to a simmer.
- Add the vegetables, kaffir lime leaves, fish sauce (or soy sauce for a vegan option), and brown sugar. Stir well to coat in the curry sauce.
- Simmer for about 15-20 minutes, or until the vegetables are tender.
- Remove from heat and stir in the fresh Thai basil leaves.
- Serve hot with steamed rice.
