
Thai-inspired Pasta Snack Bowl

Ingredients:
- 200 grams Pasta
- 1 can (400ml) Coconut Milk
- 1 cup Chicken or Vegetable Stock
- 2 tbsp Red Thai Curry Paste
- 1 tbsp Fish Sauce or Soy Sauce
- 1 tbsp Brown Sugar
- 2 cloves Garlic
- 1 whole Red Bell Pepper
- 3 whole Scallions
- To taste – Cilantro
- For serving – Lime
Instructions:
- Begin by boiling your pasta according to the package instructions. Once cooked, drain and set aside.
- In a large pan over medium heat, sauté the garlic and red thai curry paste until fragrant (around 2 minutes).
- Pour in the coconut milk and chicken or vegetable stock, stir to combine.
- Add in the fish sauce or soy sauce, brown sugar and sliced red bell pepper. Allow the mixture to simmer for 10 minutes.
- Mix in your cooked pasta, making sure to stir well so that all the pasta is coated with the sauce.
- Allow the pasta to cook in the sauce for a further 5-10 minutes until it is heated through.
- Serve your Thai-inspired Pasta Snack Bowl hot, garnished with sliced scallions, cilantro and a squeeze of lime.
