Thai-inspired Pasta Snack Bowl

Ingredients:

  • 200 grams Pasta
  • 1 can (400ml) Coconut Milk
  • 1 cup Chicken or Vegetable Stock
  • 2 tbsp Red Thai Curry Paste
  • 1 tbsp Fish Sauce or Soy Sauce
  • 1 tbsp Brown Sugar
  • 2 cloves Garlic
  • 1 whole Red Bell Pepper
  • 3 whole Scallions
  • To taste – Cilantro
  • For serving – Lime

Instructions:

  1. Begin by boiling your pasta according to the package instructions. Once cooked, drain and set aside.
  2. In a large pan over medium heat, sauté the garlic and red thai curry paste until fragrant (around 2 minutes).
  3. Pour in the coconut milk and chicken or vegetable stock, stir to combine.
  4. Add in the fish sauce or soy sauce, brown sugar and sliced red bell pepper. Allow the mixture to simmer for 10 minutes.
  5. Mix in your cooked pasta, making sure to stir well so that all the pasta is coated with the sauce.
  6. Allow the pasta to cook in the sauce for a further 5-10 minutes until it is heated through.
  7. Serve your Thai-inspired Pasta Snack Bowl hot, garnished with sliced scallions, cilantro and a squeeze of lime.
