
Thai Grilled Pork with Tangy Mango Salad

Ingredients:
- 1 lb Pork loin
- 2 Ripe mangoes
- 1 medium Red onion
- 1 handful Fresh Thai basil leaves
- 1 handful Fresh mint leaves
- 1 handful Fresh cilantro leaves
- 1 Thai chili
- 3 tbsp Fresh lime juice
- 2 tbsp Fish sauce
- 1 tsp Brown sugar
- to taste Salt and pepper
Instructions:
- Preheat the grill to medium-high heat.
- Season the pork loin with salt and pepper, then grill for 7-8 minutes on each side until cooked through. Let it rest for a few minutes before slicing.
- Peel and julienne the mangoes and onion, then mix them in a large bowl with the Thai basil, mint, cilantro, and sliced Thai chili.
- In a small bowl, whisk together the lime juice, fish sauce, and brown sugar. Pour the dressing over the salad and toss to combine.
- Serve the sliced pork loin with the mango salad on the side.
