Thai Grilled Pork with Tangy Mango Salad

Ingredients:

  • 1 lb Pork loin
  • 2 Ripe mangoes
  • 1 medium Red onion
  • 1 handful Fresh Thai basil leaves
  • 1 handful Fresh mint leaves
  • 1 handful Fresh cilantro leaves
  • 1 Thai chili
  • 3 tbsp Fresh lime juice
  • 2 tbsp Fish sauce
  • 1 tsp Brown sugar
  • to taste Salt and pepper

Instructions:

  1. Preheat the grill to medium-high heat.
  2. Season the pork loin with salt and pepper, then grill for 7-8 minutes on each side until cooked through. Let it rest for a few minutes before slicing.
  3. Peel and julienne the mangoes and onion, then mix them in a large bowl with the Thai basil, mint, cilantro, and sliced Thai chili.
  4. In a small bowl, whisk together the lime juice, fish sauce, and brown sugar. Pour the dressing over the salad and toss to combine.
  5. Serve the sliced pork loin with the mango salad on the side.
