Thai Grilled Chicken Skewers

Ingredients:

  • 1.5 lbs Chicken breast
  • 3 tablespoons Red curry paste
  • 0.5 cup Coconut milk
  • 2 tablespoons Brown sugar
  • 2 tablespoons Fish sauce
  • 2 cloves Garlic cloves
  • 12 pieces Wooden skewers
  • for garnish Fresh cilantro

Instructions:

  1. Cut the chicken breast into bite-sized pieces and set aside.
  2. In a bowl, mix together the red curry paste, coconut milk, brown sugar, fish sauce, and minced garlic.
  3. Add the chicken pieces to the bowl and marinate for at least 15 minutes, up to overnight.
  4. Preheat your grill to medium-high heat.
  5. Thread the chicken pieces onto the wooden skewers.
  6. Grill the chicken skewers for 4-5 minutes on each side, until cooked through and slightly charred.
  7. Finish with a sprinkle of fresh chopped cilantro and serve hot.
