
Thai Grilled Chicken Skewers

Ingredients:
- 1.5 lbs Chicken breast
- 3 tablespoons Red curry paste
- 0.5 cup Coconut milk
- 2 tablespoons Brown sugar
- 2 tablespoons Fish sauce
- 2 cloves Garlic cloves
- 12 pieces Wooden skewers
- for garnish Fresh cilantro
Instructions:
- Cut the chicken breast into bite-sized pieces and set aside.
- In a bowl, mix together the red curry paste, coconut milk, brown sugar, fish sauce, and minced garlic.
- Add the chicken pieces to the bowl and marinate for at least 15 minutes, up to overnight.
- Preheat your grill to medium-high heat.
- Thread the chicken pieces onto the wooden skewers.
- Grill the chicken skewers for 4-5 minutes on each side, until cooked through and slightly charred.
- Finish with a sprinkle of fresh chopped cilantro and serve hot.
