
Thai Grilled Chicken Salad

Ingredients:
- 2 pieces skinless, boneless chicken breasts
- 1 tablespoon olive oil
- 3 tablespoons lime juice
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 2 cloves garlic
- 6 cups mixed salad greens
- 1 medium carrot
- 1 medium cucumber
- 1 medium red bell pepper
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
Instructions:
- Preheat the grill on medium-high heat. Coat the chicken with olive oil, season with salt and pepper. Grill until cooked through, about 6 minutes per side. Let rest for 5 minutes then slice thinly.
- While the chicken is cooking, whisk together lime juice, soy sauce, honey, and crushed garlic cloves for the dressing.
- Place salad greens, carrot, cucumber, and bell pepper in a large bowl. Top with the sliced chicken, mint leaves, and cilantro.
- Pour the dressing over the top of the salad, toss gently to mix. Serve immediately.
