Thai Grilled Chicken Salad

Ingredients:

  • 2 pieces skinless, boneless chicken breasts
  • 1 tablespoon olive oil
  • 3 tablespoons lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic
  • 6 cups mixed salad greens
  • 1 medium carrot
  • 1 medium cucumber
  • 1 medium red bell pepper
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves

Instructions:

  1. Preheat the grill on medium-high heat. Coat the chicken with olive oil, season with salt and pepper. Grill until cooked through, about 6 minutes per side. Let rest for 5 minutes then slice thinly.
  2. While the chicken is cooking, whisk together lime juice, soy sauce, honey, and crushed garlic cloves for the dressing.
  3. Place salad greens, carrot, cucumber, and bell pepper in a large bowl. Top with the sliced chicken, mint leaves, and cilantro.
  4. Pour the dressing over the top of the salad, toss gently to mix. Serve immediately.
