Thai Fruit Pancake Delight

Ingredients:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon sugar
  • 0.5 teaspoon salt
  • 1 cup milk
  • 1 unit egg
  • 2 tablespoons unsalted butter, melted
  • 2 cups fresh mixed fruits (mango, banana, strawberry, dragon fruit)
  • to taste honey or maple syrup

Instructions:

  1. In a mixing bowl, combine the flour, baking powder, sugar, and salt.
  2. In another bowl, whisk together milk, egg, and melted butter.
  3. Gradually mix the wet ingredients into the dry until the batter is smooth.
  4. Heat a pan over medium heat and coat it lightly with butter.
  5. Pour 1/4 cup of batter onto the pan for each pancake. Cook until edges are dry and bubbles form on the surface, then flip and cook until golden brown.
  6. Serve the pancakes warm, topped with fresh mixed fruits. Drizzle honey or maple syrup as desired.
