
Thai Fish Stir-Fry

Ingredients:
- 450 grams White fish fillets
- 2 cloves Garlic
- 1 Red chili
- 1 inch piece Fresh ginger
- 1 stalk Lemongrass
- 1 handful Thai basil leaves
- 2 tablespoons Soy sauce
- 2 tablespoons Vegetable oil
Instructions:
- Remove the skin from the fish fillets, then cut into bite-sized chunks.
- Peel and finely chop the garlic. Deseed and finely chop the chili. Peel and finely chop the ginger. Trim and finely chop the lemongrass.
- Heat the oil in a large frying pan or wok. Add the garlic, chili, ginger, and lemongrass. Stir-fry for 1-2 minutes until fragrant.
- Add the fish to the pan and stir-fry for 3-4 minutes, or until the fish is cooked through. Be careful not to break up the chunks of fish.
- Stir in the soy sauce and a good handful of Thai basil leaves. Stir-fry for another minute, then serve.
