Thai Fish Stir-Fry

Ingredients:

  • 450 grams White fish fillets
  • 2 cloves Garlic
  • 1 Red chili
  • 1 inch piece Fresh ginger
  • 1 stalk Lemongrass
  • 1 handful Thai basil leaves
  • 2 tablespoons Soy sauce
  • 2 tablespoons Vegetable oil

Instructions:

  1. Remove the skin from the fish fillets, then cut into bite-sized chunks.
  2. Peel and finely chop the garlic. Deseed and finely chop the chili. Peel and finely chop the ginger. Trim and finely chop the lemongrass.
  3. Heat the oil in a large frying pan or wok. Add the garlic, chili, ginger, and lemongrass. Stir-fry for 1-2 minutes until fragrant.
  4. Add the fish to the pan and stir-fry for 3-4 minutes, or until the fish is cooked through. Be careful not to break up the chunks of fish.
  5. Stir in the soy sauce and a good handful of Thai basil leaves. Stir-fry for another minute, then serve.
