Thai Fish Cakes (Tod Mun Pla)

Ingredients:

  • 500 grams White fish (such as cod, haddock, or polloc
  • 2 tablespoons Red Thai curry paste
  • 2 tablespoons Fish sauce
  • 2 tablespoons Cornflour
  • 1 Egg
  • 100 grams Long green beans
  • Vegetable oil for frying
  • Cucumber relish for serving

Instructions:

  1. Cut the fish into chunks and put it into a food processor. Add the curry paste, fish sauce, cornflour, and egg. Process until you have a smooth paste.
  2. Chop the green beans into small 1cm pieces. Mix into the fish paste.
  3. Heat a generous amount of oil in a pan over a medium-high heat.
  4. Divide the fish mixture into small patties. Be careful not to make them too big, or they won’t cook in the middle. Flatten them slightly with your hand.
  5. Carefully drop the patties into the hot oil and fry for 4-5 minutes on each side, until golden brown and crispy.
  6. Remove from the oil and place on a kitchen paper to drain excess oil.
  7. Serve the Thai Fish cakes hot with cucumber relish.
