
Thai Fish Cakes (Tod Mun Pla)

Ingredients:
- 500 grams White fish (such as cod, haddock, or polloc
- 2 tablespoons Red Thai curry paste
- 2 tablespoons Fish sauce
- 2 tablespoons Cornflour
- 1 Egg
- 100 grams Long green beans
- Vegetable oil for frying
- Cucumber relish for serving
Instructions:
- Cut the fish into chunks and put it into a food processor. Add the curry paste, fish sauce, cornflour, and egg. Process until you have a smooth paste.
- Chop the green beans into small 1cm pieces. Mix into the fish paste.
- Heat a generous amount of oil in a pan over a medium-high heat.
- Divide the fish mixture into small patties. Be careful not to make them too big, or they won’t cook in the middle. Flatten them slightly with your hand.
- Carefully drop the patties into the hot oil and fry for 4-5 minutes on each side, until golden brown and crispy.
- Remove from the oil and place on a kitchen paper to drain excess oil.
- Serve the Thai Fish cakes hot with cucumber relish.
