Thai Fish Cakes

Ingredients:

  • 500 grams White fish fillets
  • 1 tablespoon Red curry paste
  • 3 leaves Kaffir lime leaves
  • 2 whole Eggs
  • 1/4 cup Long beans
  • for serving Thai sweet chili sauce
  • for frying Vegetable oil

Instructions:

  1. Start by placing the fish, curry paste, lime leaves, and eggs into a food processor. Process until well combined and paste-like.
  2. Slice the long beans into very fine pieces and mix into the fish paste.
  3. Heat up a generous amount of oil in a skillet on medium heat. Shape the fish mixture into small patties and fry each side for 2-3 minutes, or until golden brown.
  4. Once cooked, place the fish cakes on a paper towel to absorb any excess oil.
  5. Serve the Thai fish cakes warm with Thai sweet chili sauce. Enjoy your snack!
