
Thai Fish Cakes

Ingredients:
- 500 grams White fish fillets
- 1 tablespoon Red curry paste
- 3 leaves Kaffir lime leaves
- 2 whole Eggs
- 1/4 cup Long beans
- for serving Thai sweet chili sauce
- for frying Vegetable oil
Instructions:
- Start by placing the fish, curry paste, lime leaves, and eggs into a food processor. Process until well combined and paste-like.
- Slice the long beans into very fine pieces and mix into the fish paste.
- Heat up a generous amount of oil in a skillet on medium heat. Shape the fish mixture into small patties and fry each side for 2-3 minutes, or until golden brown.
- Once cooked, place the fish cakes on a paper towel to absorb any excess oil.
- Serve the Thai fish cakes warm with Thai sweet chili sauce. Enjoy your snack!
