Thai Dragon Fruit and Shrimp Salad

Ingredients:

  • 2 whole Dragon fruits
  • 250 grams Cooked shrimp
  • 1 handful Thai basil leaves
  • 1 handful Mint leaves
  • 1 whole Lime
  • 2 tbps Fish sauce
  • 1 tsp Sugar
  • 0.5 tsp Chilli flakes

Instructions:

  1. Cut the dragon fruits in half. Scoop out the white flesh, reserve the skin to serve the salad in. Dice the flesh into bite-sized pieces.
  2. Combine the dragon fruit flesh, basil and mint leaves with the cooked shrimp in a large mixing bowl.
  3. In a small bowl, make the dressing by combining the zest and juice of one lime, fish sauce, sugar and chilli flakes.
  4. Pour the dressing over the fruit, herb, and shrimp mixture. Gently toss until it's mixed well together.
  5. Spoon the salad back into the dragon fruit shells and serve immediately.
