
Thai Dragon Fruit and Shrimp Salad

Ingredients:
- 2 whole Dragon fruits
- 250 grams Cooked shrimp
- 1 handful Thai basil leaves
- 1 handful Mint leaves
- 1 whole Lime
- 2 tbps Fish sauce
- 1 tsp Sugar
- 0.5 tsp Chilli flakes
Instructions:
- Cut the dragon fruits in half. Scoop out the white flesh, reserve the skin to serve the salad in. Dice the flesh into bite-sized pieces.
- Combine the dragon fruit flesh, basil and mint leaves with the cooked shrimp in a large mixing bowl.
- In a small bowl, make the dressing by combining the zest and juice of one lime, fish sauce, sugar and chilli flakes.
- Pour the dressing over the fruit, herb, and shrimp mixture. Gently toss until it's mixed well together.
- Spoon the salad back into the dragon fruit shells and serve immediately.
