Thai Comfort Rice Bowl

Ingredients:

  • 1.5 cups Jasmine rice
  • 2.5 cups Water
  • 2 Chicken breasts
  • 3 Garlic cloves
  • 1 Red bell pepper
  • 4 stalks Green onions
  • 2 Carrots
  • 3 tablespoons Soy Sauce
  • 1 tablespoon Fish Sauce
  • 1.5 tablespoons Brown Sugar
  • 2 tablespoons Vegetable oil

Instructions:

  1. Rinse the jasmine rice in cold water until the water runs clear. In a pot, add the rice and 2.5 cups water. Bring to a boil, then lower the heat to a simmer and cover. Let cook for 15-18 minutes, or until the rice is cooked.
  2. While the rice is cooking, you can prep your protein and vegetables. Cut the chicken into bite-sized pieces. Mince the garlic and cut the bell pepper, green onions, and carrots into thin slices.
  3. In a small bowl, mix together the soy sauce, fish sauce, and brown sugar. Set aside.
  4. Heat the vegetable oil in a large pan or wok over medium-high heat. Add the chicken and cook until it's no longer pink. Remove the chicken and set aside
  5. In the same pan, add the garlic, bell pepper, green onions, and carrots. Stir fry for a few minutes until the vegetables are tender.
  6. Add the cooked chicken back into the pan with the vegetables. Pour over the soy sauce mixture and toss until everything is well coated.
  7. To serve, spoon a portion of the cooked jasmine rice into a bowl. Top with the stir-fry chicken and vegetables. Enjoy your comforting Thai rice bowl!
