
Thai Comfort Rice Bowl

Ingredients:
- 1.5 cups Jasmine rice
- 2.5 cups Water
- 2 Chicken breasts
- 3 Garlic cloves
- 1 Red bell pepper
- 4 stalks Green onions
- 2 Carrots
- 3 tablespoons Soy Sauce
- 1 tablespoon Fish Sauce
- 1.5 tablespoons Brown Sugar
- 2 tablespoons Vegetable oil
Instructions:
- Rinse the jasmine rice in cold water until the water runs clear. In a pot, add the rice and 2.5 cups water. Bring to a boil, then lower the heat to a simmer and cover. Let cook for 15-18 minutes, or until the rice is cooked.
- While the rice is cooking, you can prep your protein and vegetables. Cut the chicken into bite-sized pieces. Mince the garlic and cut the bell pepper, green onions, and carrots into thin slices.
- In a small bowl, mix together the soy sauce, fish sauce, and brown sugar. Set aside.
- Heat the vegetable oil in a large pan or wok over medium-high heat. Add the chicken and cook until it's no longer pink. Remove the chicken and set aside
- In the same pan, add the garlic, bell pepper, green onions, and carrots. Stir fry for a few minutes until the vegetables are tender.
- Add the cooked chicken back into the pan with the vegetables. Pour over the soy sauce mixture and toss until everything is well coated.
- To serve, spoon a portion of the cooked jasmine rice into a bowl. Top with the stir-fry chicken and vegetables. Enjoy your comforting Thai rice bowl!
