
Thai Comfort Pad Thai

Ingredients:
- 12 oz Rice Noodles
- 3 tbsp Vegetable Oil
- 2 cloves Garlic
- 3 Eggs
- 2 cups Bean Sprouts
- 1/2 cup Chopped Peanuts
- 4 Green Onions
- 1/2 teaspoon Red Chili Flakes
- 1/4 cup Fish Sauce
- 1/4 cup Sugar
- 1/4 cup White Vinegar
- 4 Lime Wedges
Instructions:
- Soak rice noodles in warm water until pliable, about 20 minutes. Drain well.
- In a small bowl, combine fish sauce, sugar, and vinegar. Stir until sugar is dissolved.
- In a large pan, heat vegetable oil over medium heat. Add garlic and cook until golden. Stir in soaked rice noodles and pour in fish sauce mixture. Cook, stirring frequently, for 1-2 minutes.
- Push noodles to the side of the pan and crack eggs into the pan. Scramble the eggs and combine with noodles.
- Add bean sprouts and green onions, mixing well. Cook until bean sprouts are tender, about 2 minutes.
- Remove from heat and serve garnished with chopped peanuts, chili flakes and a lime wedge. Enjoy this comforting Thai dish!
