Thai Comfort Pad Thai

Ingredients:

  • 12 oz Rice Noodles
  • 3 tbsp Vegetable Oil
  • 2 cloves Garlic
  • 3 Eggs
  • 2 cups Bean Sprouts
  • 1/2 cup Chopped Peanuts
  • 4 Green Onions
  • 1/2 teaspoon Red Chili Flakes
  • 1/4 cup Fish Sauce
  • 1/4 cup Sugar
  • 1/4 cup White Vinegar
  • 4 Lime Wedges

Instructions:

  1. Soak rice noodles in warm water until pliable, about 20 minutes. Drain well.
  2. In a small bowl, combine fish sauce, sugar, and vinegar. Stir until sugar is dissolved.
  3. In a large pan, heat vegetable oil over medium heat. Add garlic and cook until golden. Stir in soaked rice noodles and pour in fish sauce mixture. Cook, stirring frequently, for 1-2 minutes.
  4. Push noodles to the side of the pan and crack eggs into the pan. Scramble the eggs and combine with noodles.
  5. Add bean sprouts and green onions, mixing well. Cook until bean sprouts are tender, about 2 minutes.
  6. Remove from heat and serve garnished with chopped peanuts, chili flakes and a lime wedge. Enjoy this comforting Thai dish!
