Thai Comfort Fried Rice

Ingredients:

  • 2 cups Jasmine rice
  • 2 Chicken breasts
  • 2 tablespoons Vegetable oil
  • 2 Garlic cloves
  • 2 Eggs
  • 1/2 cup Carrots
  • 1/2 cup Bell peppers
  • 1/2 cup Frozen peas
  • 3 tablespoons Soy sauce
  • 1 Lime
  • Handful Fresh cilantro

Instructions:

  1. 1. Cook the jasmine rice according to package instructions, then set aside.
  2. 2. Cut the chicken into small chunks, then season with salt and pepper.
  3. 3. Heat the vegetable oil in a large skillet, then add the chicken and cook until no longer pink. Remove from skillet and set aside.
  4. 4. In the same skillet, add the minced garlic and cook until fragrant.
  5. 5. Push the garlic to one side of the skillet, then crack the eggs into the other side. Scramble the eggs until fully cooked.
  6. 6. Add the cooked rice, chopped carrots, bell peppers, and frozen peas to the skillet. Stir to combine with the garlic and eggs.
  7. 7. Add the soy sauce and stir until all ingredients are well coated.
  8. 8. Add the cooked chicken back into the skillet and stir to combine.
  9. 9. Squeeze the juice from the lime over the skillet, then toss in the fresh cilantro.
  10. 10. Stir until all ingredients are well combined, then remove from heat.
  11. 11. Serve the Thai comfort fried rice hot, with extra lime wedges and cilantro on the side.
