
Thai Comfort Fried Rice

Ingredients:
- 2 cups Jasmine rice
- 2 Chicken breasts
- 2 tablespoons Vegetable oil
- 2 Garlic cloves
- 2 Eggs
- 1/2 cup Carrots
- 1/2 cup Bell peppers
- 1/2 cup Frozen peas
- 3 tablespoons Soy sauce
- 1 Lime
- Handful Fresh cilantro
Instructions:
- 1. Cook the jasmine rice according to package instructions, then set aside.
- 2. Cut the chicken into small chunks, then season with salt and pepper.
- 3. Heat the vegetable oil in a large skillet, then add the chicken and cook until no longer pink. Remove from skillet and set aside.
- 4. In the same skillet, add the minced garlic and cook until fragrant.
- 5. Push the garlic to one side of the skillet, then crack the eggs into the other side. Scramble the eggs until fully cooked.
- 6. Add the cooked rice, chopped carrots, bell peppers, and frozen peas to the skillet. Stir to combine with the garlic and eggs.
- 7. Add the soy sauce and stir until all ingredients are well coated.
- 8. Add the cooked chicken back into the skillet and stir to combine.
- 9. Squeeze the juice from the lime over the skillet, then toss in the fresh cilantro.
- 10. Stir until all ingredients are well combined, then remove from heat.
- 11. Serve the Thai comfort fried rice hot, with extra lime wedges and cilantro on the side.
