
Thai Comfort Chicken Fried Rice

Ingredients:
- 2 cups Jasmine rice
- 2 pieces Chicken breast
- 3 cloves Garlic
- 3 tablespoons Oil
- 3 large Eggs
- 2 tablespoons Soy Sauce
- 1 tablespoon Oyster Sauce
- 1 teaspoon White sugar
- 1 bunch Green onions
- To taste Salt and pepper
Instructions:
- Cook the jasmine rice according to package instructions and set aside.
- Cut the chicken into thin strips, season with salt and pepper and set aside.
- Peel and mince the garlic cloves.
- Heat 1 tablespoon of oil in a frying pan or wok. Add in the chicken and cook until well done. Remove the chicken from the pan and set aside.
- In the same pan, add another tablespoon of oil and scramble the eggs. Once cooked, remove and set aside.
- Add the final tablespoon of oil to the pan, then add the minced garlic. Cook for a minute or until fragrant.
- Add in the cooked rice to the pan with garlic and stir to combine.
- Add the soy sauce, oyster sauce and sugar to the pan, stirring constantly until everything is well mixed.
- Add back in the cooked chicken and scramble eggs, stirring to combine.
- Finally, add in the chopped green onions, stir everything together, and serve warm.
