Thai Comfort Chicken Fried Rice

Ingredients:

  • 2 cups Jasmine rice
  • 2 pieces Chicken breast
  • 3 cloves Garlic
  • 3 tablespoons Oil
  • 3 large Eggs
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Oyster Sauce
  • 1 teaspoon White sugar
  • 1 bunch Green onions
  • To taste Salt and pepper

Instructions:

  1. Cook the jasmine rice according to package instructions and set aside.
  2. Cut the chicken into thin strips, season with salt and pepper and set aside.
  3. Peel and mince the garlic cloves.
  4. Heat 1 tablespoon of oil in a frying pan or wok. Add in the chicken and cook until well done. Remove the chicken from the pan and set aside.
  5. In the same pan, add another tablespoon of oil and scramble the eggs. Once cooked, remove and set aside.
  6. Add the final tablespoon of oil to the pan, then add the minced garlic. Cook for a minute or until fragrant.
  7. Add in the cooked rice to the pan with garlic and stir to combine.
  8. Add the soy sauce, oyster sauce and sugar to the pan, stirring constantly until everything is well mixed.
  9. Add back in the cooked chicken and scramble eggs, stirring to combine.
  10. Finally, add in the chopped green onions, stir everything together, and serve warm.
