
Thai Comfort Chicken Curry

Ingredients:
- 4 pieces Chicken breasts
- 2 tablespoons Red curry paste
- 400 ml Coconut milk
- 2 tablespoons Vegetable oil
- 1 cup Sweet basil leaves
- 1 piece Green bell pepper
- 1 piece Red bell pepper
- 1 piece White onion
- 2 cups Jasmine rice
- 1 tablespoon Fish sauce
- 2 teaspoons Brown sugar
- 1 piece Lime
Instructions:
- Cut the chicken into bite-size pieces. Chop the bell peppers and onion.
- Heat the oil in a large pan over medium heat. Add the curry paste and cook for 2 minutes until fragrant.
- Add the chicken to the pan and cook until it changes color.
- Add coconut milk, fish sauce, and brown sugar to the pan. Stir well until combined.
- Add the chopped bell peppers and onion to the pan. Let it simmer for 10 minutes.
- Meanwhile, cook the jasmine rice according to the package instructions.
- Just before serving, stir in the basil leaves. Squeeze lime over the curry.
- Serve the curry over the jasmine rice.
