Thai Comfort Chicken Curry

Ingredients:

  • 4 pieces Chicken breasts
  • 2 tablespoons Red curry paste
  • 400 ml Coconut milk
  • 2 tablespoons Vegetable oil
  • 1 cup Sweet basil leaves
  • 1 piece Green bell pepper
  • 1 piece Red bell pepper
  • 1 piece White onion
  • 2 cups Jasmine rice
  • 1 tablespoon Fish sauce
  • 2 teaspoons Brown sugar
  • 1 piece Lime

Instructions:

  1. Cut the chicken into bite-size pieces. Chop the bell peppers and onion.
  2. Heat the oil in a large pan over medium heat. Add the curry paste and cook for 2 minutes until fragrant.
  3. Add the chicken to the pan and cook until it changes color.
  4. Add coconut milk, fish sauce, and brown sugar to the pan. Stir well until combined.
  5. Add the chopped bell peppers and onion to the pan. Let it simmer for 10 minutes.
  6. Meanwhile, cook the jasmine rice according to the package instructions.
  7. Just before serving, stir in the basil leaves. Squeeze lime over the curry.
  8. Serve the curry over the jasmine rice.
