Thai Chicken Satay Skewers

Ingredients:

  • 2 medium size Chicken breasts
  • 2 tablespoons Soy sauce
  • 1 tablespoon Lemon juice
  • 1 tablespoon Brown sugar
  • 1 teaspoon Ground cumin
  • 2 tablespoons Peanut butter
  • 8 pieces Bamboo skewers

Instructions:

  1. Cut the chicken into thin strips and set aside.
  2. In a mixing bowl, combine the soy sauce, lemon juice, brown sugar, and ground cumin. Stir until the sugar has dissolved.
  3. Add the chicken strips into the bowl and marinate for at least 15 minutes.
  4. Preheat your grill or stovetop grill pan to medium-high heat.
  5. Thread the chicken onto the bamboo skewers. Reserve the leftover marinade for basting.
  6. Grill the chicken skewers for about 4-5 minutes per side, basting with leftover marinade, until the chicken is cooked through and lightly charred.
  7. Serve the chicken skewers warm with peanut butter on the side for dipping.
