Thai Chicken Fried Rice

Ingredients:

  • 2 pieces Chicken breasts
  • 2 cups Jasmine rice
  • 3 Eggs
  • 1 large Carrot
  • 1/2 cup Peas
  • 3 tablespoons Soy sauce
  • 1 tablespoon Fish sauce
  • 1/2 teaspoon White pepper
  • 2 stalks Green onions
  • 2 cloves Garlic
  • 3 tablespoons Vegetable oil

Instructions:

  1. Cook the jasmine rice according to the package instructions and let it cool.
  2. Chop the chicken breasts into small pieces and marinate them with 1 tablespoon of soy sauce.
  3. Beat the eggs in a small bowl.
  4. Mince the garlic and chop the carrots, green onions, and peas into small pieces.
  5. In a wok or large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the garlic and saute until fragrant.
  6. Add the chicken and cook until it turns white and is fully cooked.
  7. Push the chicken to one side of the wok, and on the other side, add another tablespoon of oil. Add the beaten eggs and scramble them.
  8. When the eggs are cooked, mix them with the chicken. Then, add the carrots, peas, and cooked rice.
  9. Add 2 tablespoons of soy sauce, 1 tablespoon of fish sauce, and 1/2 teaspoon of white pepper. Stir everything together until well mixed.
  10. Finally, add the sliced green onions, mix well, and remove from heat. The Thai Chicken Fried Rice is ready to serve.
