
Thai Chicken Fried Rice

Ingredients:
- 2 pieces Chicken breasts
- 2 cups Jasmine rice
- 3 Eggs
- 1 large Carrot
- 1/2 cup Peas
- 3 tablespoons Soy sauce
- 1 tablespoon Fish sauce
- 1/2 teaspoon White pepper
- 2 stalks Green onions
- 2 cloves Garlic
- 3 tablespoons Vegetable oil
Instructions:
- Cook the jasmine rice according to the package instructions and let it cool.
- Chop the chicken breasts into small pieces and marinate them with 1 tablespoon of soy sauce.
- Beat the eggs in a small bowl.
- Mince the garlic and chop the carrots, green onions, and peas into small pieces.
- In a wok or large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the garlic and saute until fragrant.
- Add the chicken and cook until it turns white and is fully cooked.
- Push the chicken to one side of the wok, and on the other side, add another tablespoon of oil. Add the beaten eggs and scramble them.
- When the eggs are cooked, mix them with the chicken. Then, add the carrots, peas, and cooked rice.
- Add 2 tablespoons of soy sauce, 1 tablespoon of fish sauce, and 1/2 teaspoon of white pepper. Stir everything together until well mixed.
- Finally, add the sliced green onions, mix well, and remove from heat. The Thai Chicken Fried Rice is ready to serve.
