
Thai Breakfast Shrimp Fried Rice

Ingredients:
- 1.5 cups Shrimp
- 3 cups Cooked jasmine rice
- 3 tablespoons Vegetable oil
- 2 teaspoons Chopped garlic
- 2 Large eggs
- 1/4 teaspoon White pepper
- 2 tablespoons Soy sauce
- 1 tablespoon Oyster sauce
- 3 stalks Green onions
- Handful Cilantro
- Optional Sliced cucumbers
- Optional Lime wedges
Instructions:
- Heat 2 tablespoons of the oil in a wok or frying pan over medium-high heat. Add the garlic and stir fry for about 15 seconds.
- Add the shrimp and stir fry until they are almost cooked through.
- Push the shrimp to one side of the wok, then crack eggs into the pan. Scramble the eggs until cooked.
- Now add the cooked rice into the pan, stir well to mix with all ingredients.
- Season the rice with soy sauce, oyster sauce, and white pepper, stir well.
- Add the green onions and stir just until mixed in.
- Turn off the heat, sprinkle over fresh cilantro. Serve hot with cucumber slices and lime wedges if desired.
