Thai Breakfast Shrimp Fried Rice

Ingredients:

  • 1.5 cups Shrimp
  • 3 cups Cooked jasmine rice
  • 3 tablespoons Vegetable oil
  • 2 teaspoons Chopped garlic
  • 2 Large eggs
  • 1/4 teaspoon White pepper
  • 2 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 3 stalks Green onions
  • Handful Cilantro
  • Optional Sliced cucumbers
  • Optional Lime wedges

Instructions:

  1. Heat 2 tablespoons of the oil in a wok or frying pan over medium-high heat. Add the garlic and stir fry for about 15 seconds.
  2. Add the shrimp and stir fry until they are almost cooked through.
  3. Push the shrimp to one side of the wok, then crack eggs into the pan. Scramble the eggs until cooked.
  4. Now add the cooked rice into the pan, stir well to mix with all ingredients.
  5. Season the rice with soy sauce, oyster sauce, and white pepper, stir well.
  6. Add the green onions and stir just until mixed in.
  7. Turn off the heat, sprinkle over fresh cilantro. Serve hot with cucumber slices and lime wedges if desired.
