
Thai Breakfast Quinoa Stir Fry

Ingredients:
- 1 cup Quinoa
- 1 tablespoon Olive Oil
- 1 clove Garlic
- 1 pc Bell Pepper
- 2 pc Eggs
- 1 tablespoon Soy Sauce
- 1 cup Green Onions
- 1/4 cup Fresh Cilantro
Instructions:
- Cook quinoa according to package instructions and set aside.
- Heat oil in a large pan over medium heat. Add garlic and sauté until fragrant.
- Add bell pepper to the pan and cook until tender.
- Move the pepper and garlic to the side of the pan and crack the eggs into the pan. Scramble the eggs until cooked through.
- Add the cooked quinoa to the pan and stir everything together. Pour soy sauce over the mixture and continue to stir until everything is evenly coated.
- Remove from heat and stir in green onions and cilantro. Serve hot.
