Thai Breakfast Quinoa Stir Fry

Ingredients:

  • 1 cup Quinoa
  • 1 tablespoon Olive Oil
  • 1 clove Garlic
  • 1 pc Bell Pepper
  • 2 pc Eggs
  • 1 tablespoon Soy Sauce
  • 1 cup Green Onions
  • 1/4 cup Fresh Cilantro

Instructions:

  1. Cook quinoa according to package instructions and set aside.
  2. Heat oil in a large pan over medium heat. Add garlic and sauté until fragrant.
  3. Add bell pepper to the pan and cook until tender.
  4. Move the pepper and garlic to the side of the pan and crack the eggs into the pan. Scramble the eggs until cooked through.
  5. Add the cooked quinoa to the pan and stir everything together. Pour soy sauce over the mixture and continue to stir until everything is evenly coated.
  6. Remove from heat and stir in green onions and cilantro. Serve hot.
