Thai Breakfast Pasta

Ingredients:

  • 500 grams Pasta
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 2 pieces Red chilies
  • 200 grams Shrimps/prawns
  • 1 tablespoon Thai fish sauce
  • 1 tablespoon Soy sauce
  • 4 pieces Eggs
  • 1 cup Basil leaves
  • 1 cup Bean sprouts

Instructions:

  1. Cook the pasta according to package instructions.
  2. Heat the oil in a large pan or wok over medium heat, then add the garlic and red chilies. Cook until the garlic is soft.
  3. Add the shrimps to the pan and cook until they are pink and cooked through.
  4. Add the Thai fish sauce and soy sauce to the pan. Stir well to combine all the ingredients.
  5. Crack the eggs into the pan and scramble them into the pasta and shrimp.
  6. Turn off the heat and add the basil leaves and bean sprouts. Stir them into the hot pasta, allowing them to wilt slightly.
  7. Serve the pasta hot, ideally while still a little wet from the eggs and sauces.
