Thai Breakfast Noodle Stir-fry

Ingredients:

  • 250 grams Egg noodles
  • 3 tablespoons Cooking oil
  • 2 cloves Garlic
  • 2 piece Red chilies
  • 1 piece Green bell peppers
  • 4 piece Eggs
  • 2 tablespoons Thai fish sauce
  • 2 tablespoons Thai soy sauce
  • 1 teaspoon Sugar
  • 1/2 cup chopped Green onions
  • 1/4 cup chopped Thai basil leaves

Instructions:

  1. Boil the egg noodles according to the package instructions, then drain and set aside.
  2. Heat the oil in a large wok or skillet over medium heat. Add the garlic and chilies, stirring until the garlic starts to brown.
  3. Add the bell peppers and stir-fry for about 2 minutes.
  4. Crack the eggs into the wok. Scramble and cook until they're almost set, then add the drained noodles.
  5. Add the fish sauce, soy sauce, and sugar, stirring everything together so the noodles are evenly coated in sauce. Cook for 1-2 minutes.
  6. Remove the wok from the heat and stir in the green onions and Thai basil. Serve hot.
