
Thai Breakfast Fried Rice (Kao Phat)

Ingredients:
- 4 cups Cooked jasmine rice
- 3 tablespoons Vegetable oil
- 4 cloves minced Garlic
- 3 sliced Green onions
- 4 Eggs
- 2 tablespoons Fish sauce
- 2 tablespoons Soy sauce
- 1/2 cup Chopped fresh cilantro
- 4 Lime wedges
Instructions:
- Heat the vegetable oil in a large pan or wok over medium-high heat. Add the minced garlic and stir-fry until it turns golden brown.
- Add the sliced green onions and stir-fry for 2 minutes until they begin to soften.
- Push the onions and garlic to the sides of the pan and crack the eggs in the center. Stir quickly to scramble the eggs and mix them with the onions and garlic.
- Add the cooked jasmine rice to the pan and stir to combine with the egg mixture. Press the rice down lightly with the back of your spatula to help it cook evenly.
- Drizzle the fish sauce and soy sauce over the rice. Stir well to coat each grain of rice in the sauces.
- Turn off the heat and sprinkle the stir-fried rice with chopped cilantro. Toss lightly until the cilantro is mixed in.
- Serve the Thai breakfast fried rice while it's hot, along with lime wedges for guests to squeeze over their servings.
