Thai Breakfast Fried Rice

Ingredients:

  • 2 cups Jasmine rice
  • 2 pieces Chicken breasts
  • 2 cloves Garlic
  • 4 pieces Eggs
  • 3 tablespoons Vegetable oil
  • 2 tablespoons Fish sauce
  • 2 tablespoons Soy sauce
  • 1 bunch Green onions
  • 1 piece Fresh lime
  • 1 bunch Cilantro

Instructions:

  1. Cook the jasmine rice according to the package instructions. Let it cool down.
  2. Chop the chicken breasts into small pieces, mince the garlic and slice the green onions.
  3. Heat one tablespoon of vegetable oil in a pan, add the eggs and scramble them. Transfer the eggs to a bowl.
  4. In the same pan, pour another tablespoon of oil and cook the chicken until no pink color is visible. Add the minced garlic and let it cook until it's fragrant.
  5. Add the cooked rice in the pan and mix it well with the chicken and garlic.
  6. Pour in the fish sauce and soy sauce into the pan. Add the scrambled eggs and half of the sliced green onions.
  7. Stir everything together until it's well mixed. Adjust salt and pepper if needed.
  8. Serve the fried rice with remaining green onions, cilantro leaves, and give it a good squeeze of fresh lime on top.
