
Thai Breakfast Fried Rice

Ingredients:
- 2 cups Jasmine rice
- 2 pieces Chicken breasts
- 2 cloves Garlic
- 4 pieces Eggs
- 3 tablespoons Vegetable oil
- 2 tablespoons Fish sauce
- 2 tablespoons Soy sauce
- 1 bunch Green onions
- 1 piece Fresh lime
- 1 bunch Cilantro
Instructions:
- Cook the jasmine rice according to the package instructions. Let it cool down.
- Chop the chicken breasts into small pieces, mince the garlic and slice the green onions.
- Heat one tablespoon of vegetable oil in a pan, add the eggs and scramble them. Transfer the eggs to a bowl.
- In the same pan, pour another tablespoon of oil and cook the chicken until no pink color is visible. Add the minced garlic and let it cook until it's fragrant.
- Add the cooked rice in the pan and mix it well with the chicken and garlic.
- Pour in the fish sauce and soy sauce into the pan. Add the scrambled eggs and half of the sliced green onions.
- Stir everything together until it's well mixed. Adjust salt and pepper if needed.
- Serve the fried rice with remaining green onions, cilantro leaves, and give it a good squeeze of fresh lime on top.
