Thai Breakfast Fish Stew

Ingredients:

  • 4 pieces white fish fillets
  • 1 can coconut milk
  • 2 pieces lemon grass stalks
  • 4 pieces kaffir lime leaves
  • 2 tbsp Thai red curry paste
  • 2 cloves garlic
  • 2 inch piece ginger
  • 2 tbsp fish sauce
  • 2 tbsp brown sugar
  • 1 lime lime juice
  • 1/2 cup basil leaves
  • 4 servings cooked jasmine rice
  • to taste springs cilantro
  • to taste sliced fresh chilli

Instructions:

  1. 1. In a large pot, heat the coconut milk over medium heat until it begins to simmer.
  2. 2. Bruise the lemon grass stalks with the back of your knife and add it to the pot together with the kaffir lime leaves, red curry paste, minced garlic and sliced ginger. Stir well until all the ingredients are mixed.
  3. 3. Once the mixture has started to simmer, add the fish fillets, fish sauce, brown sugar, and juice from the lime. Cover the pot, reduce the heat to low and allow it to simmer gently for 15 minutes.
  4. 4. After 15 minutes, gently stir in the basil leaves. Let the stew simmer for another 5 minutes.
  5. 5. Serv the stew hot over jasmine rice, garnished with fresh cilantro and sliced chilli as per your taste. Enjoy your Thai Breakfast Fish Stew!
