Thai Beef Stir-Fry with Morning Glory

Ingredients:

  • 500 grams beef tenderloin
  • 4 cups morning glory (water spinach)
  • 3 units garlic clove
  • 2 units bird’s eye chillies
  • 2 tablespoons oyster sauce
  • 1 tablespoon light soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon coconut sugar
  • 2 tablespoons canola oil

Instructions:

  1. Prepare the morning glory by washing it and separating the leaves from the stems. Cut the stems into 2 inch pieces.
  2. Slice the beef into thin strips.
  3. Mince the garlic and bird's eye chillies together.
  4. In a wok, heat the canola oil. Add minced garlic and chillies, stir until fragrant.
  5. Add the sliced beef to the wok, stir-fry until it’s nearly cooked.
  6. Add in the oyster sauce, light soy sauce, fish sauce, and coconut sugar. Stir-fry to combine.
  7. Finally, add the morning glory stems, followed by the leaves. Stir-fry until the leaves are just wilted, then serve hot.
