
Thai Beef Stir-Fry with Morning Glory

Ingredients:
- 500 grams beef tenderloin
- 4 cups morning glory (water spinach)
- 3 units garlic clove
- 2 units bird’s eye chillies
- 2 tablespoons oyster sauce
- 1 tablespoon light soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon coconut sugar
- 2 tablespoons canola oil
Instructions:
- Prepare the morning glory by washing it and separating the leaves from the stems. Cut the stems into 2 inch pieces.
- Slice the beef into thin strips.
- Mince the garlic and bird's eye chillies together.
- In a wok, heat the canola oil. Add minced garlic and chillies, stir until fragrant.
- Add the sliced beef to the wok, stir-fry until it’s nearly cooked.
- Add in the oyster sauce, light soy sauce, fish sauce, and coconut sugar. Stir-fry to combine.
- Finally, add the morning glory stems, followed by the leaves. Stir-fry until the leaves are just wilted, then serve hot.
