Thai Beef Noodle Soup

Ingredients:

  • 1 pound beef shank
  • 200 grams egg noodles
  • 2 garlic cloves
  • 2 star anise
  • 1 cinnamon stick
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 lime
  • 2 green onions
  • 2 stalks cilantro
  • 1 red chili

Instructions:

  1. In a large pot, simmer the beef shank, garlic, star anise, and cinnamon stick in 8 cups of water for 1 hour until the beef is tender.
  2. Remove the beef and strain the broth. Return the broth to the pot.
  3. Stir in the soy sauce, fish sauce, and brown sugar. Bring the broth back to a simmer.
  4. Cook the egg noodles according to the package instructions. Drain and divide among 4 bowls.
  5. Slice the beef thinly and place on top of the noodles. Pour the hot broth over.
  6. Garnish with the juice of the lime, green onions, cilantro, and red chili to taste. Serve hot.
