Thai Beef Noodle Soup

Ingredients:
- 1 pound beef shank
- 200 grams egg noodles
- 2 garlic cloves
- 2 star anise
- 1 cinnamon stick
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 lime
- 2 green onions
- 2 stalks cilantro
- 1 red chili
Instructions:
- In a large pot, simmer the beef shank, garlic, star anise, and cinnamon stick in 8 cups of water for 1 hour until the beef is tender.
- Remove the beef and strain the broth. Return the broth to the pot.
- Stir in the soy sauce, fish sauce, and brown sugar. Bring the broth back to a simmer.
- Cook the egg noodles according to the package instructions. Drain and divide among 4 bowls.
- Slice the beef thinly and place on top of the noodles. Pour the hot broth over.
- Garnish with the juice of the lime, green onions, cilantro, and red chili to taste. Serve hot.
