Thai Beef Comfort Bowl

Ingredients:

  • 1 lb sliced beef
  • 2 cups jasmine rice
  • 1 whole red bell pepper, thinly sliced
  • 2 tbsp red curry paste
  • 1 14 oz can coconut milk
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 whole lime, juiced
  • 1/2 cup fresh Thai basil leaves

Instructions:

  1. Cook jasmine rice according to package instructions.
  2. In a large skillet over medium-high heat, stir-fry beef until browned. Remove from the skillet and set aside.
  3. In the same skillet, add red curry paste, stir for 1-2 minutes until fragrant.
  4. Add thinly sliced red bell pepper to the skillet and stir-fry until it begins to soften.
  5. Stir in coconut milk, fish sauce, and brown sugar. Bring to a simmer.
  6. Add the cooked beef back into the skillet. Stir to combine and let it simmer for another 10 minutes.
  7. Turn off the heat, stir in fresh lime juice and Thai basil leaves.
  8. Fluff the rice with a fork and divide among bowls. Top each bowl with a portion of the Thai beef mixture.
  9. Serve hot, garnished with extra basil leaves if desired.
