
Thai Beef Comfort Bowl

Ingredients:
- 1 lb sliced beef
- 2 cups jasmine rice
- 1 whole red bell pepper, thinly sliced
- 2 tbsp red curry paste
- 1 14 oz can coconut milk
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 1 whole lime, juiced
- 1/2 cup fresh Thai basil leaves
Instructions:
- Cook jasmine rice according to package instructions.
- In a large skillet over medium-high heat, stir-fry beef until browned. Remove from the skillet and set aside.
- In the same skillet, add red curry paste, stir for 1-2 minutes until fragrant.
- Add thinly sliced red bell pepper to the skillet and stir-fry until it begins to soften.
- Stir in coconut milk, fish sauce, and brown sugar. Bring to a simmer.
- Add the cooked beef back into the skillet. Stir to combine and let it simmer for another 10 minutes.
- Turn off the heat, stir in fresh lime juice and Thai basil leaves.
- Fluff the rice with a fork and divide among bowls. Top each bowl with a portion of the Thai beef mixture.
- Serve hot, garnished with extra basil leaves if desired.
