Thai Basil Fried Rice

Ingredients:

  • 2 cups Jasmine Rice
  • 1 cup Chicken breast
  • 2 tablespoons Vegetable oil
  • 3 pieces Garlic cloves
  • 1 piece Red Bell Pepper
  • 1 piece Carrot
  • 1 piece Egg
  • 1 cup Thai Basil leaves
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Brown Sugar
  • 2 stalks Green Onion
  • 4 pieces Lime wedges

Instructions:

  1. Cook the jasmine rice according to the package instructions and set aside.
  2. Heat the oil in a pan over medium heat. Add the chopped garlic and stir-fry for about 30 seconds or until aromatic.
  3. Add the diced chicken breast to the pan and cook until browned and cooked through. Remove and set aside.
  4. In the same pan, add the diced bell pepper and carrot. Stir-fry for about 2-3 minutes.
  5. Push the vegetables to one side of the pan, and crack the egg into the other. Scramble the egg and mix it with the vegetables.
  6. Add the cooked chicken and rice back into the pan with the vegetables and eggs.
  7. In a small bowl, mix together the soy sauce, fish sauce, and brown sugar. Pour the sauce mixture over the rice in the pan and mix well.
  8. Add the Thai basil leaves to the pan and stir until they are just wilted.
  9. Garnish with chopped green onions and serve with lime wedges.
