
Thai Basil Fried Rice

Ingredients:
- 2 cups Jasmine Rice
- 1 cup Chicken breast
- 2 tablespoons Vegetable oil
- 3 pieces Garlic cloves
- 1 piece Red Bell Pepper
- 1 piece Carrot
- 1 piece Egg
- 1 cup Thai Basil leaves
- 2 tablespoons Soy Sauce
- 1 tablespoon Fish Sauce
- 1 tablespoon Brown Sugar
- 2 stalks Green Onion
- 4 pieces Lime wedges
Instructions:
- Cook the jasmine rice according to the package instructions and set aside.
- Heat the oil in a pan over medium heat. Add the chopped garlic and stir-fry for about 30 seconds or until aromatic.
- Add the diced chicken breast to the pan and cook until browned and cooked through. Remove and set aside.
- In the same pan, add the diced bell pepper and carrot. Stir-fry for about 2-3 minutes.
- Push the vegetables to one side of the pan, and crack the egg into the other. Scramble the egg and mix it with the vegetables.
- Add the cooked chicken and rice back into the pan with the vegetables and eggs.
- In a small bowl, mix together the soy sauce, fish sauce, and brown sugar. Pour the sauce mixture over the rice in the pan and mix well.
- Add the Thai basil leaves to the pan and stir until they are just wilted.
- Garnish with chopped green onions and serve with lime wedges.
