Thai Basil Chicken Breakfast Bowl

Ingredients:

  • 2 pieces Chicken breast
  • 1 cup Thai basil leaves
  • 3 cloves Garlic cloves
  • 2 pieces Bird's eye chili
  • 2 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 teaspoon Sugar
  • 2 pieces Eggs
  • 1.5 cups Jasmine rice
  • as needed Oil

Instructions:

  1. Start by cooking your jasmine rice according to package instructions.
  2. While your rice is cooking, finely chop your garlic and chilies. Keep in mind, the more chilies you use, the spicier your dish will be.
  3. Cut your chicken into bite-sized pieces.
  4. Heat up a pan with some oil, crack your eggs into the pan and fry them sunny-side up. Set them aside for later.
  5. In the same pan, add a bit more oil if necessary, then add your chopped chilies and garlic. Sauté until fragrant.
  6. Add your chicken to the pan, sauté until it's fully cooked.
  7. Pour in your soy sauce, oyster sauce, and sugar, then stir everything together until the chicken is well-coated.
  8. Add your Thai basil leaves to the pan last, stir until they're just wilted.
  9. Serve your chicken over jasmine rice with the fried egg on top. Enjoy your spicy Thai Basil Chicken Breakfast Bowl hot.
