
Thai Baked Fish with Lemongrass and Basil

Ingredients:
- 4 pieces white fish fillets (like cod, halibut)
- 1 stalk lemongrass
- 2 cloves garlic
- 1 red chili
- 1 inch fresh ginger
- 2 tablespoons fish sauce
- juice of 1 lime lime juice
- 1 teaspoon honey
- 1 handful fresh basil leaves
- to taste salt
- to taste black pepper
Instructions:
- Preheat the oven to 400F (200C) and line a baking tray with foil.
- Clean and pat dry the fish fillets. Season them with salt and black pepper, then arrange them on the prepared tray.
- Prepare the marinade by finely chopping the lemongrass (discard the outer layers first), garlic, red chili, and ginger. Mix them in a bowl with fish sauce, lime juice, and honey.
- Pour this marinade over the fish fillets, making sure they're fully coated. Allow them to marinate for about 15 minutes.
- Place the tray in the preheated oven and bake the fish for 20 to 25 minutes. They're done when the fish flakes easily with a fork.
- Garnish the baked fish with a handful of fresh basil leaves before serving. This dish is best enjoyed hot, paired with jasmine rice or a green salad for a balanced, healthy meal.
