Thai Baked Fish with Lemongrass and Basil

Ingredients:

  • 4 pieces white fish fillets (like cod, halibut)
  • 1 stalk lemongrass
  • 2 cloves garlic
  • 1 red chili
  • 1 inch fresh ginger
  • 2 tablespoons fish sauce
  • juice of 1 lime lime juice
  • 1 teaspoon honey
  • 1 handful fresh basil leaves
  • to taste salt
  • to taste black pepper

Instructions:

  1. Preheat the oven to 400F (200C) and line a baking tray with foil.
  2. Clean and pat dry the fish fillets. Season them with salt and black pepper, then arrange them on the prepared tray.
  3. Prepare the marinade by finely chopping the lemongrass (discard the outer layers first), garlic, red chili, and ginger. Mix them in a bowl with fish sauce, lime juice, and honey.
  4. Pour this marinade over the fish fillets, making sure they're fully coated. Allow them to marinate for about 15 minutes.
  5. Place the tray in the preheated oven and bake the fish for 20 to 25 minutes. They're done when the fish flakes easily with a fork.
  6. Garnish the baked fish with a handful of fresh basil leaves before serving. This dish is best enjoyed hot, paired with jasmine rice or a green salad for a balanced, healthy meal.
