Teriyaki Chicken Donburi

Ingredients:

  • 500 grams Boneless chicken thighs
  • 2 cups Japanese short grain rice
  • 3 cups Water
  • 0.25 cup Soy sauce
  • 0.25 cup Mirin
  • 2 tablespoons Sugar
  • 1 tablespoon Sesame oil
  • 2 stalks Spring onions
  • 1 tablespoon Sesame seeds

Instructions:

  1. Wash the rice under cold water until the water runs clear. Add the washed rice and water to the rice cooker and cook according to the manufacturer's instructions.
  2. While the rice is cooking, cut the chicken into bite-sized pieces.
  3. Heat the sesame oil in a pan over medium heat. Once hot, add the chicken pieces and cook until they are no longer pink inside.
  4. In a separate bowl, mix together the soy sauce, mirin, and sugar. Once combined, add this to the pan with the chicken. Cook for a further 10-15 minutes, or until the sauce has thickened and coats the chicken.
  5. Slice the spring onions into thin, diagonal slices.
  6. Once the chicken is done, scatter the sesame seeds over the top.
  7. To serve, spoon a portion of rice into a bowl. Top with the teriyaki chicken, and garnish with the sliced spring onions. Serve while hot.
