
Teriyaki Chicken Donburi

Ingredients:
- 500 grams Boneless chicken thighs
- 2 cups Japanese short grain rice
- 3 cups Water
- 0.25 cup Soy sauce
- 0.25 cup Mirin
- 2 tablespoons Sugar
- 1 tablespoon Sesame oil
- 2 stalks Spring onions
- 1 tablespoon Sesame seeds
Instructions:
- Wash the rice under cold water until the water runs clear. Add the washed rice and water to the rice cooker and cook according to the manufacturer's instructions.
- While the rice is cooking, cut the chicken into bite-sized pieces.
- Heat the sesame oil in a pan over medium heat. Once hot, add the chicken pieces and cook until they are no longer pink inside.
- In a separate bowl, mix together the soy sauce, mirin, and sugar. Once combined, add this to the pan with the chicken. Cook for a further 10-15 minutes, or until the sauce has thickened and coats the chicken.
- Slice the spring onions into thin, diagonal slices.
- Once the chicken is done, scatter the sesame seeds over the top.
- To serve, spoon a portion of rice into a bowl. Top with the teriyaki chicken, and garnish with the sliced spring onions. Serve while hot.
