Szechuan Style Pasta

Ingredients:

  • 500 grams Bow tie pasta
  • 3 pieces Garlic cloves
  • 2 inch Ginger
  • 1 teaspoon Szechuan peppercorns
  • 5 pieces Dried red chillies
  • 2 tablespoons Soy sauce
  • 1 teaspoon Sugar
  • 2 tablespoon Vegetable oil
  • 3 stalks Spring onions

Instructions:

  1. Boil the pasta according to the instructions on the package, then drain and set aside.
  2. Crush the garlic, ginger, and Szechuan peppercorns using a mortar and pestle.
  3. Heat the vegetable oil in a wok over medium heat, then add the crushed garlic, ginger, and Szechuan peppercorns.
  4. Add the dried red chillies and fry for a minute before adding the soy sauce and sugar.
  5. Stir well and let it cook for a couple of minutes.
  6. Add the cooked pasta to the wok and mix well to combine.
  7. Slice the spring onions and sprinkle them on top as a garnish before serving.
