
Szechuan Spicy Grilled Fish

Ingredients:
- 1 piece Whole white fish (like snapper or bass)
- 2 tablespoons Szechuan peppercorns
- 2 teaspoons Red chili flakes
- 2 cloves Garlic
- 2 slices Fresh ginger
- 2 tablespoons Dark soy sauce
- 1 tablespoon Oyster sauce
- 1 tablespoon Chinese rice wine
- 2 tablespoons Vegetable oil
- 3 stalks Green onions
- 1 piece Red bell peppers
Instructions:
- Clean the fish and process it, keeping the head and tail intact.
- Grind the Szechuan peppercorns into a coarse powder and set aside.
- Mix the Szechuan pepper, red chili flakes, chopped garlic, and sliced ginger together and set aside.
- Combine the dark soy sauce, oyster sauce, and Chinese rice wine in another bowl.
- Heat up a grill pan with the vegetable oil and fry the fish until both sides are slightly charred and the fish is cooked through.
- Add the ground peppercorn and chili mixture to the fish on the grill and cook until you can smell the aroma.
- Add the onion and bell pepper slices to the dish, stir to combine, and cook for 1 minute.
- Serve the fish hot, garnished with additional green onions if desired.
