Szechuan Spicy Grilled Fish

Ingredients:

  • 1 piece Whole white fish (like snapper or bass)
  • 2 tablespoons Szechuan peppercorns
  • 2 teaspoons Red chili flakes
  • 2 cloves Garlic
  • 2 slices Fresh ginger
  • 2 tablespoons Dark soy sauce
  • 1 tablespoon Oyster sauce
  • 1 tablespoon Chinese rice wine
  • 2 tablespoons Vegetable oil
  • 3 stalks Green onions
  • 1 piece Red bell peppers

Instructions:

  1. Clean the fish and process it, keeping the head and tail intact.
  2. Grind the Szechuan peppercorns into a coarse powder and set aside.
  3. Mix the Szechuan pepper, red chili flakes, chopped garlic, and sliced ginger together and set aside.
  4. Combine the dark soy sauce, oyster sauce, and Chinese rice wine in another bowl.
  5. Heat up a grill pan with the vegetable oil and fry the fish until both sides are slightly charred and the fish is cooked through.
  6. Add the ground peppercorn and chili mixture to the fish on the grill and cook until you can smell the aroma.
  7. Add the onion and bell pepper slices to the dish, stir to combine, and cook for 1 minute.
  8. Serve the fish hot, garnished with additional green onions if desired.
