Szechuan Spicy Beef

Ingredients:

  • 1 pound beef flank steak
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon Szechuan peppercorns
  • 8 pieces dried chili peppers
  • 2 cloves garlic
  • 1 inch piece ginger
  • 2 stalks green onions
  • 3 tablespoons vegetable oil

Instructions:

  1. Slice the beef into thin slices, then marinate with soy sauce and cornstarch for 10 minutes.
  2. Heat a skillet over medium heat and dry roast the Szechuan peppercorns for 1-2 minutes until fragrant. Crush finely and set aside.
  3. In the same pan, heat up 2 tablespoons of oil over high heat. Saute the dried chili peppers, minced garlic, and grated ginger until fragrant.
  4. Add the beef and stir-fry for 4-5 minutes until browned.
  5. Add the crushed Szechuan peppercorns and sliced green onions. Continue to stir fry for another 2 minutes.
  6. Transfer to a serving dish and garnish with more green onions. Serve with warm rice.
