
Szechuan Spicy Beef

Ingredients:
- 1 pound beef flank steak
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon Szechuan peppercorns
- 8 pieces dried chili peppers
- 2 cloves garlic
- 1 inch piece ginger
- 2 stalks green onions
- 3 tablespoons vegetable oil
Instructions:
- Slice the beef into thin slices, then marinate with soy sauce and cornstarch for 10 minutes.
- Heat a skillet over medium heat and dry roast the Szechuan peppercorns for 1-2 minutes until fragrant. Crush finely and set aside.
- In the same pan, heat up 2 tablespoons of oil over high heat. Saute the dried chili peppers, minced garlic, and grated ginger until fragrant.
- Add the beef and stir-fry for 4-5 minutes until browned.
- Add the crushed Szechuan peppercorns and sliced green onions. Continue to stir fry for another 2 minutes.
- Transfer to a serving dish and garnish with more green onions. Serve with warm rice.
