
Sweet & Sour Pineapple Chicken

Ingredients:
- 2 pieces chicken breasts
- 1 can pineapple chunks
- 1 piece red bell pepper
- 1 piece onion
- 3 cloves garlic
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1/4 cup brown sugar
- 2 tablespoons cornstarch
- 4 cups cooked rice
Instructions:
- Cut the chicken into bite-sized pieces, and chop the red bell pepper and onion into chunks.
- Heat a wok or large frying pan over medium heat. Add the chicken and cook until browned and cooked through.
- Add the chopped vegetables to the pan and cook until they are tender.
- Drain the pineapple chunks, reserving the juice. Add the chunks to the pan.
- Mix together the reserved pineapple juice, soy sauce, vinegar, sugar, and cornstarch. Stir until smooth.
- Pour the sauce over the chicken and vegetables in the pan. Stir well to combine.
- Cook over medium heat until the sauce thickens.
- Serve the sweet and sour chicken over cooked rice. Enjoy your comforting Chinese lunch!
