Sweet & Sour Pineapple Chicken

Ingredients:

  • 2 pieces chicken breasts
  • 1 can pineapple chunks
  • 1 piece red bell pepper
  • 1 piece onion
  • 3 cloves garlic
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons cornstarch
  • 4 cups cooked rice

Instructions:

  1. Cut the chicken into bite-sized pieces, and chop the red bell pepper and onion into chunks.
  2. Heat a wok or large frying pan over medium heat. Add the chicken and cook until browned and cooked through.
  3. Add the chopped vegetables to the pan and cook until they are tender.
  4. Drain the pineapple chunks, reserving the juice. Add the chunks to the pan.
  5. Mix together the reserved pineapple juice, soy sauce, vinegar, sugar, and cornstarch. Stir until smooth.
  6. Pour the sauce over the chicken and vegetables in the pan. Stir well to combine.
  7. Cook over medium heat until the sauce thickens.
  8. Serve the sweet and sour chicken over cooked rice. Enjoy your comforting Chinese lunch!
