
Sweet and Sour Pineapple Chicken

Ingredients:
- 2 pieces Boneless chicken breasts
- 2 cups Pineapple chunks
- 1 piece Green bell pepper
- 1 piece Red onion
- 2 cloves Garlic
- 0.25 cup Soy sauce
- 0.25 cup Vinegar
- 0.5 cup Brown sugar
- 0.5 cup Corn starch
- 2 tablespoons Cooking oil
Instructions:
- Cut the chicken into bite-sized pieces and set aside.
- Chop the bell pepper and onion into 1-inch pieces.
- In a large pan, heat the oil over medium heat. Add the chicken and cook until golden brown.
- Add the green pepper, onion, and garlic to the pan. Stir fry for a few minutes until the vegetables are softened.
- In a separate bowl, mix together the soy sauce, vinegar, brown sugar, and corn starch to create a sauce.
- Add the sauce to the pan with the chicken and vegetables. Stir well to combine.
- Add the pineapple chunks to the pan and stir gently to mix.
- Simmer the mixture for 10-15 minutes until the sauce has thickened.
- Serve hot, ideally over steamed rice.
