Sweet and Sour Pineapple Chicken

Ingredients:

  • 2 pieces Boneless chicken breasts
  • 2 cups Pineapple chunks
  • 1 piece Green bell pepper
  • 1 piece Red onion
  • 2 cloves Garlic
  • 0.25 cup Soy sauce
  • 0.25 cup Vinegar
  • 0.5 cup Brown sugar
  • 0.5 cup Corn starch
  • 2 tablespoons Cooking oil

Instructions:

  1. Cut the chicken into bite-sized pieces and set aside.
  2. Chop the bell pepper and onion into 1-inch pieces.
  3. In a large pan, heat the oil over medium heat. Add the chicken and cook until golden brown.
  4. Add the green pepper, onion, and garlic to the pan. Stir fry for a few minutes until the vegetables are softened.
  5. In a separate bowl, mix together the soy sauce, vinegar, brown sugar, and corn starch to create a sauce.
  6. Add the sauce to the pan with the chicken and vegetables. Stir well to combine.
  7. Add the pineapple chunks to the pan and stir gently to mix.
  8. Simmer the mixture for 10-15 minutes until the sauce has thickened.
  9. Serve hot, ideally over steamed rice.
