
Sumptuous Italian Veggie Scramble

Ingredients:
- 2 tbsp extra-virgin olive oil
- 1 medium, chopped red onion
- 1 medium, chopped red bell pepper
- 1 medium, chopped zucchini
- 1 cup sliced mushrooms
- 2 minced garlic cloves
- 1 cup diced tomatoes
- 6 large organic eggs
- 2 cups spinach leaves
- 1/2 cup grated Parmesan cheese
- salt and pepper to taste
Instructions:
- Heat the olive oil in a large, non-stick pan over medium-high heat. Add the onion, bell pepper, zucchini, and mushrooms. Cook for about 5 minutes, or until the vegetables are slightly softened.
- Add the minced garlic and diced tomatoes to the pan, and continue to cook for another 2 minutes.
- Beat the eggs in a separate bowl. Reduce the heat to medium and pour the beaten eggs into the pan, stirring gently to combine. Cook until the eggs are almost fully set.
- Add the spinach leaves to the pan, stirring gently until the spinach is wilted, and the eggs are fully cooked.
- Sprinkle the scramble with the grated Parmesan cheese. Season with salt and pepper to taste.
- Serve the Italian Veggie Scramble hot, garnished with extra Parmesan cheese if desired. Enjoy your healthy, hearty Italian breakfast!
