Sumptuous Italian Veggie Scramble

Ingredients:

  • 2 tbsp extra-virgin olive oil
  • 1 medium, chopped red onion
  • 1 medium, chopped red bell pepper
  • 1 medium, chopped zucchini
  • 1 cup sliced mushrooms
  • 2 minced garlic cloves
  • 1 cup diced tomatoes
  • 6 large organic eggs
  • 2 cups spinach leaves
  • 1/2 cup grated Parmesan cheese
  • salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large, non-stick pan over medium-high heat. Add the onion, bell pepper, zucchini, and mushrooms. Cook for about 5 minutes, or until the vegetables are slightly softened.
  2. Add the minced garlic and diced tomatoes to the pan, and continue to cook for another 2 minutes.
  3. Beat the eggs in a separate bowl. Reduce the heat to medium and pour the beaten eggs into the pan, stirring gently to combine. Cook until the eggs are almost fully set.
  4. Add the spinach leaves to the pan, stirring gently until the spinach is wilted, and the eggs are fully cooked.
  5. Sprinkle the scramble with the grated Parmesan cheese. Season with salt and pepper to taste.
  6. Serve the Italian Veggie Scramble hot, garnished with extra Parmesan cheese if desired. Enjoy your healthy, hearty Italian breakfast!
