
Summer Sunrise Italian Chicken Bake

Ingredients:
- 4 pieces Chicken breast
- 2 tablespoons Olive oil
- 2 tablespoons Italian seasoning
- 2 Garlic cloves
- 1.5 cups Cherry tomatoes
- 1.5 cups Mozzarella cheese
- 1/2 cup Fresh basil leaves
- 1 tablespoon Balsamic vinegar
- Salt and pepper to taste
Instructions:
- 1. Preheat your oven to 375°F (190°C).
- 2. Season both sides of the chicken breasts with the Italian seasoning, minced garlic, salt, and pepper.
- 3. Heat the olive oil in a large oven-safe skillet over medium heat.
- 4. Add the chicken to the skillet and sear it on both sides until it's golden brown. This should take about 2-3 minutes per side.
- 5. While the chicken is searing, slice the cherry tomatoes in half.
- 6. After the chicken is seared, remove it from the skillet and set it aside.
- 7. In the same skillet, add the cherry tomatoes and cook them until they're softened, about 5 minutes.
- 8. Return the chicken to the skillet, placing it on top of the tomatoes.
- 9. Sprinkle the mozzarella cheese over the top of the chicken and tomatoes.
- 10. Transfer the skillet to the oven and bake it for 20-25 minutes, or until the chicken is fully cooked and the cheese is melted and bubbly.
- 11. Drizzle the balsamic vinegar over the top of the chicken and tomatoes.
- 12. Garnish with fresh basil leaves before serving.
