
Summer Morning Chicken Bruschetta

Ingredients:
- 4 pieces Boneless chicken breasts
- 2 tablespoons Extra virgin olive oil
- 2 cloves Garlic cloves
- 1 cup sliced Cherry tomatoes
- 1/2 cup chopped Basil leaves
- 1/4 cup cup Balsamic vinegar
- 1/2 cup cup Grated parmesan cheese
- 1 loaf Baguette
- to taste Salt
- to taste Black Pepper
Instructions:
- Preheat oven to 375°F (190°C).
- Bake the baguette in the oven until slightly golden brown, then set aside.
- In a large bowl, mix the sliced cherry tomatoes, chopped basil leaves, balsamic vinegar, salt, and pepper. Set aside.
- In a large ovenproof skillet, heat the olive oil over medium heat. Add the garlic and sauté until fragrant. Add chicken breasts to the skillet and cook until golden brown on both sides.
- Place the skillet with chicken in the oven and bake for 15-20 minutes, until chicken is cooked through.
- Remove the chicken from the oven and let it cool slightly. Then, slice the chicken breasts.
- To assemble, slice the baguette if you haven't already. Place a slice or two of baked chicken on each slice of baguette. Top with the tomato-basil mixture and sprinkle with parmesan cheese.
- Serve immediately and enjoy this comforting, yet light and zesty, summer breakfast!
