
Summer Fruit Pasta Salad

Ingredients:
- 2 cups Penne pasta
- 2 cups Mixed fruits (strawberries, blueberries, kiwi)
- 2 cups Spinach
- 2 tablespoons Olive oil
- 1 tablespoon Balsamic vinegar
- 1 tablespoon Honey
- 0.5 teaspoon Salt
- 0.25 teaspoon Black pepper
Instructions:
- Cook the penne pasta according to the package instructions, then drain and let cool.
- While the pasta is cooking, prepare your fruit by washing and cutting it into bite-sized pieces.
- In a large bowl, combine the cooled pasta, fruit, and spinach.
- Prepare the dressing by whisking together the olive oil, balsamic vinegar, honey, salt, and black pepper until well combined.
- Pour the dressing over the pasta salad and toss until everything is evenly coated.
- Serve the pasta salad immediately, or refrigerate it for later. Enjoy!
