Summer Fruit Pasta Salad

Ingredients:

  • 2 cups Penne pasta
  • 2 cups Mixed fruits (strawberries, blueberries, kiwi)
  • 2 cups Spinach
  • 2 tablespoons Olive oil
  • 1 tablespoon Balsamic vinegar
  • 1 tablespoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Instructions:

  1. Cook the penne pasta according to the package instructions, then drain and let cool.
  2. While the pasta is cooking, prepare your fruit by washing and cutting it into bite-sized pieces.
  3. In a large bowl, combine the cooled pasta, fruit, and spinach.
  4. Prepare the dressing by whisking together the olive oil, balsamic vinegar, honey, salt, and black pepper until well combined.
  5. Pour the dressing over the pasta salad and toss until everything is evenly coated.
  6. Serve the pasta salad immediately, or refrigerate it for later. Enjoy!
