
Summer Chicken Frittata

Ingredients:
- 2 pieces Chicken breasts
- 1 tablespoon Olive oil
- 1 medium, diced Onions
- 2 medium, diced Tomatoes
- 1 medium, diced Red bell pepper
- 8 large Eggs
- to taste Salt
- to taste Black pepper
- for garnish Fresh basil
Instructions:
- Preheat your oven to 350°F (175°C).
- Heat the olive oil in a large, oven-safe skillet over medium heat. Add the chicken and cook until no longer pink, about 7-10 minutes. Remove the chicken from the skillet and set it aside.
- In the same skillet, add the onions and bell pepper. Cook until they are softened, about 5-7 minutes.
- Add the diced tomatoes to the skillet and cook for another 2-3 minutes, until the tomatoes are slightly softened.
- In a large bowl, whisk the eggs and season with salt and pepper. Add the cooked chicken to the egg mixture and stir to combine.
- Pour the egg and chicken mixture into the skillet with the vegetables. Stir gently to combine.
- Bake the frittata in the preheated oven for 20-25 minutes, until the eggs are set.
- Remove the frittata from the oven and let it rest for a few minutes before slicing.
- Garnish with fresh basil before serving.
