Summer Chicken Frittata

Ingredients:

  • 2 pieces Chicken breasts
  • 1 tablespoon Olive oil
  • 1 medium, diced Onions
  • 2 medium, diced Tomatoes
  • 1 medium, diced Red bell pepper
  • 8 large Eggs
  • to taste Salt
  • to taste Black pepper
  • for garnish Fresh basil

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Heat the olive oil in a large, oven-safe skillet over medium heat. Add the chicken and cook until no longer pink, about 7-10 minutes. Remove the chicken from the skillet and set it aside.
  3. In the same skillet, add the onions and bell pepper. Cook until they are softened, about 5-7 minutes.
  4. Add the diced tomatoes to the skillet and cook for another 2-3 minutes, until the tomatoes are slightly softened.
  5. In a large bowl, whisk the eggs and season with salt and pepper. Add the cooked chicken to the egg mixture and stir to combine.
  6. Pour the egg and chicken mixture into the skillet with the vegetables. Stir gently to combine.
  7. Bake the frittata in the preheated oven for 20-25 minutes, until the eggs are set.
  8. Remove the frittata from the oven and let it rest for a few minutes before slicing.
  9. Garnish with fresh basil before serving.
